This is very frustrating. After long waiting for Visual Studio 2010 SP1 i found this apparently bug.

Install Visual Studio 2010 SP1 and try intellisense in SSMS 2008 R2.

I am also having this issue on my two workstations. I have tried repairing the SSMS installation, but it does not help. There are two threads on the SQL Server Forums discussing this issue as well:

IntelliSense is restored, after installing "Service Pack 1 for Microsoft® SQL Server® 2008 R2" (SQLManagementStudio package) http://www.microsoft.com/download/en/details.aspx?id=26727
