There should be an automatic variable for $PSLogFile that is normally set to $null.  If that variable gets set to a path then all STDOUT and STDERR streams should be redirected to the file defined in $PSLogFile path.  This would be invaluable to anyone trying to execute a script unattended (via group policy, batch file, automation platform, or any legacy "run" tool) and just wants to see the results.  Honestly with all the focus on automation I don't see how this wasn't a Powershell v1 feature.
